The anchovies we have chosen come from the Bay of Biscay, more precisely from SANTOÑA (Cantabria).
They are the authentic handcrafted anchovies, the real one; they are produced by a family company that has received several awards for the quality of its anchovies.
Worked entirely by hand, according to a method that respects the dictates of tradition: delisced, washed in water and salt, dried and finally preserved in sea salt.
The anchovies of the Cantabrian are considered the best in the world. Large, tasty and pulpy because in the Cantabrian Sea the anchovies find the possibility to feed themselves with greater abundance in a more oxygenated and decidedly colder water which leads them to develop a blanket of fat such as to make the meat more succulent.
