Anchovies considered for centuries as a poor food, have become an indispensable food of the kitchens all over the world.
Speaking of the excellence of this product, Cantabrian anchovies come to mind.

What are the reasons for this excellence, the raw material of the area, history and tradition of processing or what else?

The flavor of an anchovy is influenced by the place where it is caught, because the plankton, the temperature of the water and its salinity affect its flavor, aroma and texture.

In reality, if we talk about a product of excellence, what really makes the difference is the processing, therefore the salting and the filleting. It is not certain that an anchovy from the Cantabrian Sea is good regardless.

Anchovies from the Cantabrian Sea are large, with a very firm and tasty pulp. There are several factors that determine the goodness of this product, first of all the characteristics of the stretch of sea between the northern coasts of the Iberian Peninsula and those of Western France.

The processing of anchovies, certified by the Anchovies Brand of the Cantabrian of the Basque Country, still takes place today in an artisanal and manual way: from preparation for salting, to filleting and final canning.

Fishing for this species is controlled and limited from the beginning of March to the end of June.

Anchovies from the Cantabrian Sea, after being fished, are arranged in layers in a container and the salt is distributed only around it. In this way, it is slowly absorbed by the fish.

In general, when dealing with anchovies, the first tip is to evaluate the appearance: the product must be well cleaned, without skin or thorns; then the color must be evaluated, which must have light pinkish shades tending to hazelnut, without dark spots or streaks.

After evaluating these aspects, the curiosity for the different flavors must be rightly satisfied, so if we talk about anchovies from the Cantabrian Sea, we know that they are meaty, thick and tasty anchovies with a light layer of fat that makes them particularly tasty.
