The anchovies we have chosen come from the Bay of Biscay, more precisely from SANTOÑA (Cantabria).
They are the authentic handcrafted anchovies, the real one; they are produced by a family company that has received several awards for the quality of its anchovies.
Made entirely by hand, according to a method that respects the dictates of tradition: delisced, washed in water and salt, dried and finally preserved in sea salt.
The anchovies of the Cantabrian are considered the best in the world, large, tasty and pulpy because in the Cantabrian Sea the anchovies find the possibility to feed abundantly, in a more oxygenated and decidedly colder water that leads them to develop a layer of fat that makes the most succulent meat.
Recommendations for consumption: remove them from the refrigerator about 30 minutes before consumption and taste them on a crouton of toasted bread and with a curl of butter.
Also ideal with burrata or spaghetti.
