Amarone from Valpolicella d.o.c.g
It is a wine of great prestige obtained from the scrupulous selection of the best grapes, then left to dry in trays for long months.
Before pouring it is aged in large oak barrels in a skilful and not too invasive way.
Vigorous and elegant, with a complex structure and undoubted personality.
Drying: About 110-120 days, in wooden boxes placed in the loft with
possibility of controlling humidity and temperature.
Vinification: At the end of January / February, soft pressing and maceration on the
peels; slow fermentation in stainless steel tanks with
daily pumping over and punching down.
Aging: In 5 and 10 HL Slavonian oak barrels for 24 months.
Subsequent refinement in the bottle.
Alcohol content: 16% vol.
Pairings: Perfect for big gastronomic appointments, suitable with
game, roasts and spicy cheeses. Also ideal between meals
as a "meditation" wine
