Barolo "Chirlet" DOCG
From a crescent-shaped vineyard on the hills of Monforte d'Alba, a wine with a rich and complex character that combines the feminine grace of spicy, floral and small fruit aromas, with the decisive and decisive strength of tannins.
Grapes: Nebbiolo in purity
Vinification and aging: it begins with maceration of the skins in tanks with temperature control for about seven days. Following the racking, the alcoholic fermentation in steel for ten days ends. The wine is then placed in barriques, 40% new and 60% of second passage, where the malolactic fermentation takes place at a constant temperature of 20 ° for two months. The wine evolves in barriques for a total of 12 months. The refinement is completed through a further passage in large barrels lasting about 12 months. Finally, the wine decants in steel tanks and passes to the bottling stage without filtration. The bottles rest horizontally for another 8 months in the cellar, before being placed on the market.
