Tradition Royal caviar is obtained from white sturgeon, a species native to the Pacific Ocean and distributed from Alaska to Baja California. It is one of the longest-lived sturgeons, it can reach one hundred years of age, 800 kg in weight and up to 6 m in length. In addition to its lean meat with a high protein content, it is particularly prized for its conspicuous production of large eggs, from 2.8 to 3.2 millimeters, characterized by a color ranging from dark gray to black. The taste of its caviar is perfectly balanced and round, recalling the sea only in its most delicate components. With delicious notes typical of the world of pastry it meets the most demanding palate of all ages and cultures.
