The Azienda Agricola Lenza was founded in 1964 on the slopes of Monte Orfano by the will of Giuseppe Lenza, with the work of patient reconstruction of the vineyards and the planting of vines in forms of pergola given the position and exposure of the land rapidly degrading to the floor and laboriously terraced. GRAPES USED: 100% Chardonnay.
HARVEST: Manual. Anticipated with respect to physiological ripeness to ensure a high acidic level.
VINIFICATION: Pressing at low pressures, fractionation of the musts and fermentation in purity with inoculation of selected yeasts and thermal management. Stabilization of the bases in a bio-natural way.
SPUMA: Second fermentation in the bottle at low temperatures, with selected yeasts.
AGING ON YEAST: At least 20 months.
ORGANOLEPTIC PROFILE: Straw color with greenish reflections, delicate scent of fine and clean yeast. Savory taste, pleasantly fresh.
ALCOHOL CONTENT: 12.5% vol.
PAIRING: It goes well with risotto, fish dishes and white meats. Also excellent as an aperitif.
