Istadèla igt Rosso Veronese
Its name refers to the Istadèla de San Martìn, or the "little summer" which, in the middle of November, heats up the winter days in Verona in a unique way. In this period, after about 40-50 days of drying, the grapes are pressed: a blend of Cabernet Sauvignon (30%) combined with the typical blend used in Valpolicella (Corvina, Corvinone, Rondinella, Molinara).
The subsequent aging in large oak barrels for 24 months brings this full and robust wine to maturity, excellent to combine with red meats and aged cheeses.
Grapes: Cabernet Sauvignon 30%, Corvina 25%, Corvinone 25%, Rondinella 20%
Production area: Land located in the foothills of the municipality of San Pietro in Cariano, in the heart of the Valpolicella Classica.
Harvest: Manual harvest, carried out by selecting only the loosest bunches and therefore suitable for drying.
Drying: Short drying of about 40-50 days, in wooden boxes placed in the loft with the possibility of controlling humidity and temperature.
Vinification: In mid-November, soft pressing and maceration on the skins; slow fermentation in stainless steel tanks, with daily pumping over and punching down.
Aging: In 5 and 10 HL Slavonian oak barrels for 24 months. Subsequent refinement in the bottle.
Alcohol content: 15% vol.
Pairings: Suitable for game, roasts and red meats in general; ideal with spicy cheeses.
