Timut Pepper - Szechuan Wild - James 1599
Timut pepper is a Nepalese pepper, or rather a false pepper, with the spiciness of Sichuan pepper and with hints of grapefruit. In fact, both belong to the botanical family of Zanthoxylum which helps to understand the similarity in taste. But Timut is also called Wild Sichuan (or Szechuan) pepper.
Rare pepper, the notes of lemon and citrus are accentuated and able to give exoticism and freshness to dishes such as white meat, duck, shrimp, lobster, shellfish. It also divinely accompanies desserts: for this reason it is recommended to combine it with chocolate, ice cream or fruit salads, mousses and parfaits.
