FOOD-WINE PAIRING RULES AND TECHNIQUES
Mattia Asperti, Sommelier and Official AIS Taster, will reveal the secrets of food-wine pairing.
Participants (max 7 people) will learn the secrets of the correct food-wine pairing, useful for choosing the right wine for every occasion, whether it's a dinner at home with friends or a more formal evening at the restaurant.
PROGRAM DIVIDED INTO 3 DIFFERENT EVENINGS:
1st evening - CURED MEATS, CHEESE AND DESSERTS
This evening the technique of food / wine pairing will be described by contrasting sensations (meats and cheeses) and by concordance (dessert). Then it will be nice to practice with different cured meats to understand what will be the best combination and in the case of cheeses how an ingredient (balsamic vinegar or jam) can be a combination. The first evening will be very didactic in order to understand then in the following evenings how to move and how to understand when a match is correct.
2nd evening - MEAT
This evening the food / wine pairing technique will be described in relation to meat-based preparations.
3rd evening - FISH
This evening will describe the food / wine pairing technique in relation to fish-based preparations.
Each evening will last about 2 hours which includes a theoretical part followed by a practice that includes the tasting of 3 wines paired with 3 gastronomic preparations (the portions will be didactic).
