Review of Valpolicella DOC
It is a precious red wine whose name recalls the refermentation on the classic Recioto and Amarone pomace, a process that gives this great wine an immediate link with the territory.
Grapes: Corvina and Corvinone 60%, Rondinella 30%, Molinara and others

Production area: Land located in the foothills of the municipality of San Pietro in Cariano, in the heart of the Valpolicella Classica.
Harvest: Strictly manual harvest, from the end of September to
mid-October depending on the year.
Drying: Light drying of about 20-25 days in trays.
Vinification: According to the traditional technique used in the area for
enhance the Valpolicella. A first and traditional fermentation, carried out at the end of October in stainless steel tanks, is followed by a second one generally in February / March, on the pomace of Recioto and Amarone. It is obtained
thus a product with a unique structure of its kind.
Aging: In 5 and 10 HL Slavonian oak barrels for about 18 months.
Subsequent refinement in the bottle.
Alcohol content: 14% vol.
Pairings: Risotto and other first courses of the Veronese tradition; red meats; hard cheeses.
