Valpolicella DOC Classico Superiore
This Valpolicella is produced with carefully selected grapes, left to rest for 20-25 days before pressing, in order to obtain concentration, richness in aromas and softness.
The grapes are then vinified without the conventional "Ripasso" technique, to allow the maximum expression of the territory in its spontaneity and naturalness. Purple red with ruby reflections. Fine, elegant and fresh of red fruits and spices. It is a striking wine for its remarkable elegance and complexity.
Grapes: Corvina and Corvinone 65%, Rondinella 25%, Molinara and other minor 10%
Production area: Land located in the foothills of the municipality of San Pietro in Cariano, in the heart of the Valpolicella Classica.
Harvest: Strictly manual harvest, from the end of September to mid-October depending on the vintage.
Drying: Light drying of about 20-25 days in trays.
Vinification: In late October / early November, soft pressing and maceration on the skins; slow fermentation in stainless steel tanks, with daily pumping over and punching down.
Aging: In 10 and 20 HL Slavonian oak barrels for about 8 months. Subsequent refinement in the bottle.
Alcohol content: 13.5% vol.
Pairings: Risotto and other first courses of the Veronese tradition; red meats; hard aged cheeses.
